Pancakes

Here is a recipe for that traditional Shrove Tuesday food.


Sift the flour, sugar, salt, and baking powder into a bowl then resift. Combine the milk, butter, and egg yolk and beat until well mixed. Mix the liquid into the dry ingredients with a wooden spoon. Be careful not to overmix. Beat the egg white until it is stiff then fold it into the batter. Heat a frying pan over a medium-high flame until it is evenly heated. Melt a small amount of butter into the pan and add the pancake mixture. Cook until the mixture starts to bubble then flip the pancake. Wrap the pancakes in a tea towel and store them in a warm oven until ready to serve. Serve on warm plates with butter and maple syrup.

Makes approximately eight pancakes.
